Being inspired by a collection of photographed vegetarian and vegan recipes put together in Via Fratta, Gradara, along the east coast of the northwestern part of Italy, between the Marche and Emilia Romagna regions, shoot by Valentina Solfrini. The course starting from some traditional recipes, teaches how to use plants and flowers, the dishes, the flora used, how to recognize it, where to collect it, to allow your personal harvest.

born in near the sea and next to the woods, in a place for which the love I had to nurture. I felt the love for it grow within me as I were the parent, and not the child, of a countryside that is one of the most beautiful in Italy. I mainly eat very simple foods, I love to write about gatherings, about our Sunday meals spent together, about those recipes that might not be always low in calories but are always genuine, made with love and with local ingredients. I do love to keep these meals for sharing, as sharing makes all the food taste better. Hortus collects the recipes that belong to Italian culture and to the twist this culture is taking in the modern era.
In November 2017 Hortus became a book, Naturally Vegetarian, published by Penguin Random House, which features stories and recipes from the Italian countryside and many anecdotes from life in the countryside from my own family. . hortus cuisine
